...ok, it takes more than two seconds but...

Ingredients:

1 avocado (firm, not overly ripe)
1 tomato, chopped into 1 inch pieces (or approximately 1/2 pint cherry tomatoes, cut in 1/2)
2 scallions, diced
1 tbsp. good quality olive oil
salt
pepper

Instructions:

1.  Take everything and put it in a glass bowl and mix.  Voila!  It's a great side dish for two, or 1 yummy lunch for one person.  You can double or triple the recipe to serve more.
