1 cup chopped tomatoes
1 cup chopped kalamata olives
2 tablespoons chopped parsley
2 tablespoons finely chopped red onion (or very sweet/mild white onion)
1 tablespoon extra virgin olive oil
Directions:
1) Mix together all ingredients. Enjoy!
Notes:
If you like black olives, you'll love this salsa. I even make twice the amount and serve it as a side dish sometimes!
