This is an easy chicken dish with a bit of Italian zing. If you like mustard, you'll like this.
Ingredients:
4 boneless, chicken breasts
3 tablespoons olive oil
3 - 4 leaves fresh basil, minced
4 - 5 sprigs fresh oregano, minced
pinch of salt
pinch of ground pepper
4 heaping tablespoons dijon mustard*
Instructions:
1. Preheat the oven to 350 °. Lay the chicken breasts in a glass baking dish with a little space between each.
2. In a large measuring cup, combine all other ingredients, whisking them together.
3. Place approximately one heaping tablespoon of the sauce over each piece of chicken and spread it around to cover as much of the chicken surface as possible.
4. Cooking time depends on the thickness of the chicken breasts. I recommend baking it for approximately 25 minutes and then cutting into a piece in the center to check for doneness.
Special Notes:
This recipe serves 4. You can, of course, cut the recipe in half if needed. I also recommend using Grey Poupon Dijon mustard.
The spices in this dish make the chicken the star of the show. I recommend making sidedishes that do not compete with its strong flavors. Rice, pasta, or baked potatoes, and/or a simple steamed vegetable like broccoli or peas pair well.
