1/4 cup orange juice
1 tablespoon bbq sauce
1 package bacon
1 1/2 lbs jumbo shrimp (peeled, deveined, tails on)
1 cup large pineapple chunks (fresh or canned, but fresh don't fall apart as easily) (optional)
Instructions:
1. Mix together orange juice & bbq sauce, and coat shrimp with it in a ziploc bag. Marinate for only 15 minutes.
2. Cut bacon strips in 1/2. Partially cook the bacon - so it's still bendable and not all the way done.
3. Alternate bacon pieces and shrimp on skewers. If you are using pineapple, alternate pineapple chunks on the skewers with the bacon and shrimp, too.
4. Grill and watch them because they'll get done super fast.
Special Notes:
You can baste the kabobs with additional bbq sauce if you want to during the grilling process. This can be served over white rice if you desire. You can broil these kabobs instead of grilling them, too.
